A member of the Consortium des Salaisonniers Corses, Charcuterie Passoni is a family business that has been passed down through 4 generations. Founded in 1972 by Anne Passoni's father-in-law, she is helped by her daughter and two nephews, the eldest of whom is a trained pork butcher, and who are keen to perpetuate their uncles' expertise.

Address and opening times

Located in Venzolasca en Casinca, you'll find it in the Arena Suprana district at a place called Mandriaccio, by taking the road parallel to the T10 behind the hive of land. Signs will guide you up to a property with a white balustrade. To make sure you don't get lost, you can also follow the route planner at the bottom of the page. This is where the charcuterie is processed, dried and matured. The shop will be on your left as you enter the property.

The Passoni charcuterie is open Monday to Friday from 8:00 am to 6:00 pm, and on Saturdays from 8:00 am to 12:00 pm.

A traditional pork butcher's shop that has managed to modernise while remaining faithful to its ancestral know-how, Passoni's pork butcher's shop has a character that is very representative of traditional Corsican pork butcher's shop, one that appeals to everyone, both fine and spicy, with a good balance between spices, salt and pepper.

All the cured meats

You'll find all the traditional cured meats, smoked over chestnut wood in the drying sheds:

  • Pork or wild boar salami
  • Coppa
  • Lonzu
  • Prisuttu (Corsican ham)
  • Panzetta
  • Bulagna

After maturing for 9 months, prisuttu is sold whole or in vacuum-packed pieces. You'll also find wild boar sausage, which is made from a mixture of pork and wild boar, and has a slightly stronger flavour than traditional salsiccia made from pork alone.

Figatellu in winter

In November, you'll find the first figatellis, which can be cooked over a wood fire or in a frying pan to accompany your winter meals.

Direct sale and by mail order

The shop is open all year round from Monday to Saturday lunchtime, for direct sales with the option of paying by credit card. It's also here that we prepare the parcels ready to be dispatched for mail-order orders. For more information, please contact Mme Passoni directly.

Charcuterie Passoni Frères can also be found in the island's supermarkets and grocery shops, as well as in certain specialist shops.
