Menu du jour à l'Ardoise
Alessandro works from the slate, and the restaurant's menu changes every day depending on what's available and the local market. The menu consists of starters, main courses, hamburgers, a menu of fresh pasta made daily in the restaurant, ground by i Mulinaghji Corsi on a stone millstone, homemade desserts made daily and ice creams also produced in the restaurant. The ice creams are made from fresh raw milk from cows reared at Talasani, and the sorbets from Corsican fruit. See the Corse Matin article on I Fuletti.

As the restaurant is often fully booked, we recommend that you reserve your table by telephone, especially at weekends. The restaurant has a 50-seat air-conditioned dining room, to which a 20-seat veranda was added in February 2019, as well as around 50 seats outside on a shaded terrace, giving a total of around 120 seats.
Restaurant opening times
Opened in 2018 in Folelli, the I Fuletti restaurant is open for lunch every day of the week, and in the evening from Thursday to Sunday.
Homemade and innovative
I Fuletti celebrates Italian cuisine by making its own fresh pasta, as seen in the video of the gnocchi being prepared, as well as its mozzarella. The chips are also homemade, and the bread comes from the bakery.
It's through this work philosophy that Alessandro constantly seeks out local produce, fruit, vegetables, Corsican meat and fish when they arrive. He only works with fresh produce and also offers home-made ice creams.
Cuisine with a Corsican and Italian flavour
The cuisine served at I Fuletti will delight gourmets with its Mediterranean flavours and quality products.
Blue crab cuisine, an invasive species
The blue crab has been making headlines in recent years, invading the island's ponds and devouring everything in its path, including fish, oysters and mussels.
A calamity for fishermen, Alessandro is proposing to tackle it by putting the crustacean in the middle of the plate, which moreover has a delicate and tasty flesh.

It's hard to resist a freshly squeezed juice made from local citrus fruits on demand, for maximum freshness and vitamins. This is a continuous service, as the restaurant remains open from 11am to 5pm as an ice cream parlour in summer.
Wine list
The wine list features Balagne wines from Domaine Maestracci, Domaine de Solenzara and Stéphanie Olmeta's organic wine. Corsican beers such as Ribella are also on the menu, as are muscats, champagne, pastis, Martini, Corsican cape, rum, gin, whisky, vodka and other spirits.
Warm welcome and reception
The restaurant pays a great deal of attention to its customers, both in terms of the pleasure they get from their meal and in terms of the welcome and service they receive. Friendly and attentive in a natural setting, the team has made the restaurant an unmissable, enjoyable culinary stop-off for two, family or friends.
History of the place
The name I Fuletti refers to the origins of the place, and this history is written on a slate inside the restaurant as well as on the first page of the menu:
At the origin of this place were brackish waters, from which gushed strange lights that the inhabitants of the village of Casinca, in the heights, took for "Fuletti". Thus was born Folelli, the village of the will-o'-the-wisps. As for us, we've kept the original name, out of a love for our roots and traditions, which are essential for building the future.
