La charcuterie Torre - Ferme A Casetta in Cuttoli Corticchiato near Ajaccio, is a wedding caterer that owns its own pig farm and sells its charcuterie directly from the Ferme A Casetta on the Cuttoli plain and online.
Farmhouse charcuterie - Direct sales by appointment
Jules-Antoine Torre - Toto - has been producing Corsican charcuterie on the Cuttoli-Corticchiato plain since 1977. The laboratory of the Torre family charcuterie is located at the A Casetta farm, a caterer and organiser of weddings and events.

Online sales - Dispatch every 15 days
Since November 2020, an online shop has been available on Brin de Corse, subject to availability. Please note that for logistical reasons, delivery can take up to 15 days, or even longer depending on the period, especially during the summer.

Preserving charcuterie the old-fashioned way
Perpetuating traditional know-how, Jules-Antoine retains old manufacturing methods such as using bread paper instead of casings to wrap charcuterie.
In this way, cured meats can be kept for longer, with a longer use-by date. Lonzu can be kept for up to a year, and coppa for up to 15 months.

The charcuterie price list can be found opposite. Boudin, fromage de tête, saucissette and figatellu are only available from the beginning of November to the end of March.
Porcu nustrale pigs
Spread over 10 hectares, the Torre family farm has 250 pigs, around a hundred of which are used each year for charcuterie. The pigs used for charcuterie are of the Corsican porcu nustrale breed, while the other half are of the Duroc breed. The latter, which are fatter, are used exclusively in the kitchen of Traiteur A Casetta, for grilled meats or dishes in sauce.
The pig farm feeds naturally on acorns and chestnuts, supplemented with barley meal.
Wedding planner in Ajaccio and surroundings - Ferme A Casetta
Set up in 1987 by Jules-Antoine Torre and his wife on the Cuttoli Corticchiato plain just outside Ajaccio on the road to Bastia, the A Casetta restaurant was a wooden shack where people got together over pizzas and grilled meats. Toto was in the kitchen before another chef took over for 18 years. Before retiring, Toto trained Yoann in fine cuisine for 10 years, assisted by his brother Michaël, who took over the family business 14 years ago.
Since then, the A Casetta farm has become a key restaurant in the Ajaccio region, before focusing on events, offering catering services throughout Corsica and organising weddings and receptions. The establishment has 3 rooms, a chalet, a reception room and a private swimming pool.

The A Casetta restaurant is designed to cater for weddings and all kinds of events. Guests are welcomed in a lounge with a bar, which opens onto the main room with its exposed beams. Opposite is a chalet for receptions.
