Prisuttu is dry-cured Corsican ham made from the pig's thigh. Salty and spicy, Corsican ham can be bought whole, ham nut, in pieces or by the slice, or vacuum-packed in slices.

In the past, each family owned one or more pigs and made its own charcuterie. Prisuttu would be cut up for special occasions or guests.

Price per kilo of prisuttu

The price of prisuttu varies between 30 and 80 euros per kilo, depending on whether it's sold whole, in pieces or sliced. In our list of producers, you'll also find the various price scales, which also depend on other criteria such as the AOC label.

How prisuttu is made

Prisuttu is made from the whole pork leg, i.e. two prisutti per pig. It is fully salted for several weeks, depending on its weight (around 1.5 days per kilo), before being desalted and coated with pepper and herbs. Finally, it is left to mature for at least 12 months, depending on its thickness.

Weight of a ham before and after maturing

After curing, the whole ham weighs less than 10 kg. It can be matured for up to 36 months, at a slightly higher price, to compensate for the weight loss of the whole product. A matured prisuttu loses around 25% of its initial weight, and depending on the time spent maturing, can weigh as little as 7 kilos.

AOC/AOP label

Since 2012, prisuttu has had its own AOC/AOP label, like two other cured meats: coppa and lonzu.
